Toast w avocado & tomato

Toast with avocado & tomato

Servings: 2 people
Carbohydrate Serves: 2 per person
(1 carbohydrate serve = 15 grams of total carbohydrate)

Need something easy to prepare as you’re flying out the door in the morning? Try this simple toast with avocado and tomato. (Main carbohydrate containing ingredients listed in bold.)

Ingredients

  • 1 medium avocado, mashed
  • 2 tomatoes, sliced
  • 4 slices wholegrain bread, toasted, 2 per person
  • 2 wedges lemon for serving
  • 100g/ 3.5 ounces light fetta, crumbled (optional)

Serve each slice of toast topped with mashed (or sliced) avocado and tomato.

Garnish with wedges of lemon and sprinkled with fetta. (Fetta is optional as it’s not recommended during pregnancy. See our Food Safety section for more info on this. You could use cottage cheese or grated Parmesan cheese instead.)

Variation: Add 1 teaspoon of crushed garlic to your mashed avocado and top with fresh coriander. You could also replace toast with your carbohydrate allowance in wholegrain crackers for change.
