Basil Pesto

Servings: 4 people
Carbohydrate Serves: <0.5 per person
(1 carbohydrate serve = 15 grams of total carbohydrate)

Pesto is a flavour-packed, easy win sauce that you can use on pasta, mixed through steamed vegetables, added to salad dressings, as a tasty topping on fish, chicken or red meat, mixed through soup or as part of a delicious salad sandwich. A hand-held blender will whip this gestational diabetes friendly Pesto up in no time and a hand-held blender is a great investment for soups and sauces in general. Although Pesto will store for a time in the fridge in an airtight jar or container, it’s best to consume fresh. (This recipe contains a minimal amount of carbohydrate.)

Ingredients

2 garlic cloves, peeled, crushed (adjust garlic to taste)
1 bunch fresh basil, roughly torn
Zest and juice of 1 lemon (adjust to taste)
2 tablespoons Parmesan cheese, grated
1 tablespoon light olive oil
Cracked black pepper

Blend all ingredients together with a hand-held blender or in a kitchen whiz until smooth.

Serving suggestion: Stir through pasta, potato salad or use as a great addition to sandwiches or soups.
