Freekeh Tabouleh

Something fresh and colourful to add to a mezze plate, or to serve along side our gestational friendly Dukkah Crusted Lamb.
Ingredients
- 1 bunch of parsley, very finely chopped
- 1 large tomato, finely chopped
- 1 large cucumber, finely chopped
- ½ small red onion, finely chopped
- 100g freekeh*, cooked according to packet instructions
- Juice of 1 lemon
Cook freekeh according to packet instructions.
Combine freekeh with remaining ingredients. Mix well.
Serving suggestions: You could either serve along with our Dukkah Crusted Lamb, or another grilled or roasted piece of meat or fish. It would also be great on a mezze plate of hummus and chopped up fresh vegetables (carrots, tomatoes, cucumber etc.), olives and some cheese.
*Freekeh is a cereal food made from green wheat that goes through a roasting process in its production. The wheat is harvested while the grains are yellow and the seeds are still soft; it is then piled and sun-dried. The piles are then carefully set on fire so only the straw and chaff burn and not the seeds. It is the high moisture content of the seeds that prevents them from burning. The now roasted wheat undergoes further thrashing and sun-drying to make the flavour, texture, and colour uniform. (Except from Wikipedia.)
