Fruit toast with ricotta & apple

Servings: 2 people
Carbohydrate Serves: 2.5 per person
(1 carbohydrate serve = 15 grams of total carbohydrate)

What is not to love about anything that contains cinnamon? If I was sent to a dessert island, I mean, desert island and could only take a few ingredients, cinnamon would be one of them. This is a great gestational diabetes friendly breakfast or snack to remember when you’re craving something sweet. (Main carbohydrate containing ingredients are listed in bold.)

Ingredients

  • 2 slices Burgen® (or equivalent) fruit toast, toasted
  • 200g/ 7 ounces light ricotta or cottage cheese (ricotta would taste best here however it’s not recommended during pregnancy – see our Food Safety section for more details)
  • 1 medium apple, peeled, grated
  • Ground cinnamon

Toast your fruit bread and simply top with about half the ricotta or cottage cheese and grated apple per person and dust with cinnamon. (Morning newspaper optional.)
